Snack Attack. . . Fruit and Nut Clusters

imageDon’t feel like you have enough time or energy to make healthy snacks, but can’t stand spending a fortune on prepared snacks?  These Fruit and Nut Clusters will save the day!  So simple and easy, these clusters will give you something you feel good about reaching for.
  1. Pick and choose your favorite combinations of fruit, nuts and seeds.
  2. Mix with your choice of brown rice syrup or corn syrup and a touch of rice cereal.
  3. Shape into clusters or bars
  4. Bake and cool
  5. Store in a cool place
  6. Try not to eat them all the first day
Fruit and Nut Clusters
1 1/2 cups nuts
1/2 cup seeds
1/2 cup dry fruit
1/3 – 1/2 cup rice cereal
1/3 cup brown rice or corn syrup
1/8 tsp salt
Pinch of cinnamon (optional)
Mix all of the dry ingredients and then add the syrup.  Mixture will be very sticky.  If ingredients aren’t completely coated, add a bit more syrup.
Drop clusters onto parchment lined baking sheet or press into lined 8×8 baking dish.  Bake at 325 degrees for 17-20 minutes until slightly browned on the edges and still soft through center.
Clusters may spread a bit while baking – simply use a fork to pull the edges in while still hot – they will hold together once cooled.
If making bars, pull from pan with liner, cut into desired size and let cool completely.
Store in airtight container or wrap individually so you can throw into your bag, car or lunch box!  Try freezing bigger batches for easy snacks – they will thaw in time for snack or lunch time.

This recipe was adapted from Leite’s Culinaria and appeared on  I have found it to be pretty full-proof and enjoy adding more nuts and rice cereal than is called for in the original recipe.
